Irene "Sophie" Knight
ROTAN- Sophie Knight, 87 went to her heavenly home Wednesday evening, September 28, 2016, at the Fisher County Hospital, surrounded by her family.
Funeral: 4 p.m. Saturday, October 1, 2016 at the Church of Christ in Rotan. Burial: Belvieu Cemetery.
Memorials in lieu of flowers: The Rotan Church of Christ or The Rotan Volunteer Fire Dept.
Sophie was born July 29, 1929 in Rotan to Jack and Mary Allen, attended Rotan schools and married D.L. Knight November 14, 1946. Together they shared 59 wonderful years. Sophie along with her loving husband was active in the Rural Electrification Coop. assisting him any way she could. Sophie was a wonderful woman who enjoyed cooking and riding with D.L. in their wagon. Her love of cooking expanded into collections of cookbooks, pots and pans and unique kitchen gadgets. Her favorite store was Wal-Mart, with Neiman Marcus a close second. Her grandkids and the UPS man joked she was "The Queen of QVC."
She was preceded in death by her parents; adopted sister Karen Allen; husband; and son-in-law Herschel Shipp.
Survivors: Daughter and Son-in-law, Luis and Sue Carrillo of Rotan, Sons and daughters-in-law, Craig and Marilynn Knight of Azle, Dicky and Charlotte Knight of Eutaw, Al.; grandchildren Buffy and Britt Sipe of Rotan, Jason and Selina Knight of Wetumpka, Al., Aaron and Jennifer Knight of Azle , Jeffery Knight of Tuscaloosa, Al., Amy and Jacob Jeter of Azle, Sarah Knight of Eutaw Al., Nina and Robert Castellanos, Elisa Trowbridge of Calif., Veronica and Manuel Garcia and Sonia Carrillo of Snyder, Great grandchildren, Nathan and Madilyn Knight of Deatsville Al., Paige Knight of Wetumpka, Al., Kade & Kloe Corn, Kallin & Madi Sipe of Rotan, Paisley & Parker Jeter and Henry Knight all of Azle, Crystal Garcia of San Antonio and Douglas Trowbridge of California; And one Great- Great grandchild, Baker Lee Knight of Deatsville Ala.
The family would like to acknowledge her loving caregiver and friend Vernell Huitt. Our heartfelt thanks to Compass Hospice and The Fisher County Hospital and staff for their love and care.
